Middle White Pork Box
The Middle White was recognised as a breed in 1852, at an agricultural show in Keighley, when a weaver named Joseph Tuley turned up with pigs the judges couldn’t categorise. Too small for the Large White class, too large for the Small White. A third class was created for them on the spot.
For the next century it was the pork pig of choice in Britain. Early maturing, sweet-fatted, and in such demand in the capital that it became known as the London Porker. But the post-war drive towards leaner bacon pigs left no room for a short, deep-bodied porker, and the breed nearly disappeared. It remains a priority breed on the Rare Breeds Survival Trust watchlist.
We have kept Middle Whites at Huntsham for over thirty years. They are slow-growing and take proper looking after, and the pork they produce is unlike anything from a commercial breed. The fat is sweet and renders cleanly. The crackling is the best you will cook.
What’s in the box:
Middle White Roasting Joint. Approx. 1.5kg on the bone, serving 5 to 6. A hot start for the crackling, then time at a lower temperature. Supplied on or off the bone, butchered to your preference.
Middle White Pork Chops. 8 chops, approx. 1.2kg. Cut thick enough to take real colour without drying out. Grill, barbecue or fry.
Middle White Belly. Approx. 1kg, supplied flat, boned and rolled, or cut into strips. Score the skin, season it generously the night before, and give it several hours. The fat renders into something close to silk.
Middle White Sausages. 4 packs of 6, approx. 1.3kg. Made here from a selection of cuts, lightly seasoned, in a natural casing.
Approximately 5kg in total. Everything is butchered on site by Jim and the team. If you’d like the joint boned and rolled, or the belly prepared differently, just tell us when you order.

Orders over £69.99 are delivered free of charge. Below that threshold, there is a £10 delivery charge. Delivered in insulated packaging, chilled and ready to cook or freeze on arrival.
