Description
Buying a share of a pig is how pork used to be bought: a little of every cut, from one animal, rather than the same cut again and again. A quarter is the easiest way in. It brings the roasting joints, the chops and the sausages in quantities a normal household can get through, without needing a chest freezer to do it.
The Middle White was once the pig London’s butchers wanted above all others, so prized that it became known as the London Porker. When post-war farming turned towards leaner bacon pigs it came close to disappearing, and it remains a priority breed on the Rare Breeds Survival Trust watchlist. We have kept Middle Whites at Huntsham for over thirty years, and around a third of the UK’s Middle Whites now live here.
The pork is sweet-fatted and full of flavour. The fat bastes the meat as it cooks, and it gives you the best crackling you will ever make.
What’s in the quarter:
Half Shoulder. Serves around 4. A roasting joint that rewards a long, slow cook.
Half Leg. Serves around 6. Left whole as a roasting joint, or cut into leg steaks for grilling or frying.
Loin. Serves around 7. As a roasting joint, or cut into chops.
Chump. Serves around 2. As chump chops, for grilling or frying.
Middle White Sausages. 6 packs of 6. Made here from a selection of cuts, lightly seasoned, in a natural casing.
Liver and Stock Bones. A quarter of the liver for frying or pâté, and bones for stock or soup.
Everything is butchered on site by Jim and the team. There are more ways to butcher a quarter pig than we could ever list as options, so we don’t try. If you have preferences (the leg as steaks, the loin as chops, joints cut to a particular size) add them to the special requests box when you order. If you’d rather talk it through, just leave it blank and we’ll give you a call before we butcher.
