Description
This is the half pig our regular customers come back for. The prime cuts arrive as joints and chops, and the rest of the pig goes into our sausages, so nothing is wasted and very little needs thinking about. One customer, ordering their second, called it the tastiest pork they had ever eaten.
The Middle White was recognised as a breed in 1852, at an agricultural show in Keighley, when a weaver named Joseph Tuley arrived with pigs the judges couldn’t categorise: too small for the Large White class, too large for the Small White. For the next century it was the pork pig of choice in Britain, until the post-war drive towards leaner bacon pigs left no room for it. It remains a priority breed on the Rare Breeds Survival Trust watchlist.
We have kept Middle Whites at Huntsham for over thirty years, and around a third of the UK’s Middle Whites now live here. They grow slowly and take proper looking after, and the pork is truly unlike any other.
What’s in the half:
Shoulder. Serves around 8. Whole, or as two smaller roasting joints.
Leg. Serves around 12. Whole, as two halves, or cut into leg steaks.
Loin. Serves around 14. As one or two roasting joints, as chops, or half and half.
Chump. Serves around 4. As a joint or as chump chops.
Middle White Sausages. 12 packs of 6. Made here from a selection of cuts, lightly seasoned, in a natural casing.
Liver and Stock Bones. Half the liver for frying or pâté, and bones for stock or soup.
Everything is butchered on site by Jim and the team. There are more ways to butcher a half pig than we could ever list as options, so we don’t try. If you have preferences (the leg as steaks, the loin as chops, joints cut to a particular size) add them to the special requests box when you order. If you’d rather talk it through, just leave it blank and we’ll give you a call before we butcher.
