The most tender cut there is, and the classic choice for a beef Wellington. Longhorn fillet carries more flavour than you’d expect from such a lean muscle, thanks to the slow-grown, well-marbled beef it comes from.
Fillet cooks quickly. Sear it hard all over, roast it briefly and rest it well, whether it’s going in pastry or straight onto the board.
