Description
Less frightening than it sounds, and nobody at the table forgets it. A suckling pig is young, tender and delicately flavoured, with soft meat under thin skin that roasts to crackling all over.
We butcher every pig for you, so there’s no wrestling a whole animal into a domestic oven. It arrives as the head, shoulder, middle and leg, with the middle tied by our butchers, ready to roast side by side. It needs little more than salt, a slow oven and time. Then it all goes in the middle of the table and everybody helps themselves.
GOOD TO KNOW
Weights shown are minimum weights. Whole or half, every suckling pig is supplied butchered into the head, shoulder, middle (tied) and leg, so there’s no need to worry about fitting it in the oven. A whole pig suits a houseful; a half suits a smaller table.
