Description
Rump is the cut butchers take home. It has a richer flavour than the sirloin and a firmer texture, and it rewards a simple approach: roast it hot and fast, rest it well and slice it thinly across the grain.
At 1.5kg it’s an easy centrepiece for a smaller table. At 3kg it feeds a crowd and leaves enough for cold beef sandwiches on Boxing Day.
